Description

This vegan cake is a quick and delicious dessert for busy days: mix all ingredients in a bowl, bake for 45 minutes and enjoy the best almond cake you’ll ever taste! It’s an easy almond cake that you can whip up in minutes! If you like chocolat you may also like my Vegan Chocolat Cake

Ingredients

2 cups all purpose flour 300g
1 cup almond flour 100g
1 cup sugar 200g
1 tsp salt
2 tsp baking powder
1 tsp baking soda (optional)
1/2 cup vegetable oil 125 mL
1 1/2 cup soy milk 375mL
1 tbsp vinegar (optional)
1 tablespoon margarine
1 tablespoon all purpose flour
Strawberry coulis:
3 cups fresh or frozen strawberries 450g
3 tablespoons maple syrup 45ml
1/2 tsp vanilla essence
1/2 teaspoon lemon juice

Directions

Preheat oven to 350°F (180°C).

In a bowl, combine flour, ground almonds, salt, baking powder, baking soda (optional) and sugar.

Add vegetable oil and soy milk and vinegar (optional).

Whisk until batter is smooth.

Use margarine to grease bottom and sides of 8-in. (20-cm) square pan. Sprinkle with flour, shaking out excess.

Pour batter into prepared pan. Bake for about 40 to 45 minutes, or until a toothpick inserted near center of cake comes out clean.

Place the strawberries, hulled and halved in a saucepan. Add maple syrup, vanilla oil and lemon juice. Simmer over medium heat for 15 minutes.
