Butternut Squash Curry
Butternut Squash Curry
This butternut squash curry recipe is amazing. Sweet, spicy and delicious.

Ingredients

1 butternut squash
1 medium onion sliced
1 diced tomato
1/2 teaspoon mustard seed
2 teaspoons curry powder
1/2 teaspoon cinnamon
1/2 teaspoon of turmeric
1/2 teaspoon cumin
1 teaspoon of red pepper purée (samba oelek) or 1/4 tsp red chili flakes
2 tablespoons of oil
1 cup of coconut milk
1 tablespoon of maple syrup
Salt and pepper to taste

Directions

Preheat the oven at 375°F

Peel and dice a butternut squash and place it in a baking dish.

Pour two tablespoons of oil in a saucepan. Sauté the onions until soft. Add a little water if necessary.

Add the spices and fry two minutes. Stirr in coconut milk. Add diced tomatoes and maple syrup salt and pepper and simmer for 5 to 10 minutes.

Pour over the butternut squash.

Place in the oven and bake 45 to 75 minutes.
