Butternut Squash Soup

Description

A delicious butternut squash soup recipe!

Ingredients

1 (2-pound or 1-kg) butternut squash
1 (15 mL) tablespoon vegetable oil
1 onion, chopped
4 cups (1 L) vegetable broth
½ cup (125 mL) coconut milk
Salt and pepper

Directions

Peel, seed and dice butternut squash. Set aside.

In a large saucepan, heat vegetable oil over medium-high heat.

Add onion and sauté for 3 to 5 minutes.

Add squash and vegetable stock. Bring to a boil, cover and reduce heat. Simmer until squash is tender, about 30 minutes.

Using a blender or immersion blender, purée soup until smooth.

Stir in coconut milk. Season with salt and pepper to taste.

Store in an airtight container in the refrigerator for up to 5 days.
