Vegan Nacho Cheese

Have you ever heard someone say: « I could almost be vegan but I just couldn’t live without cheese »? Well… now you can!! Thankfully, with this amazing vegan snack recipe you don’t have to give up anything. This vegan nacho cheese is rich, creamy and just a little bit spicy. And who doesn’t like nachos? Right?

Ingredients

1 cup (130g) of cashews
Warm water (to soak the cashews)
1 tablespoons (15 ml) onion powder
1 tablespoons (15 ml) garlic powder
4 tablespoons (60ml) of nutritional yeast
1/4 tsp (2 ml) cayenne pepper
2 tablespoons (30ml) vegetable oil
1 tablespoons (15ml) lemon juice
1 tablespoons (15ml) of tapioca flour or cornstarch
1 cup (250ml) of plain soy milk
1/4 tsp (2 ml) salt

Directions

Soak cashews in hot water for 1 hour. Drain and place the cashews in a blender.

Add remaining ingredients (except the soaking water) and blend. If the sauce becomes too thick, simply add an additional splash of soy milk .

Transfer the mixture to a saucepan.

Bring to a boil, and stir until it thickens.

Remove from the heat and serve on tortilla chips. Top with salsa, olives, jalapeños and scallions.
