Description

This is my favorite hummus recipe. It’s easy to make, very inexpensive and very healthy. Hummus is excellent when paired with fresh vegetables and pita chips. Try hummus instead of mayonnaise on your next sandwich or wrap.

Ingredients

1 can (19 oz./540 mL) chickpeas, rinsed and drained (keep the liquid)
3 tablespoons sesame tahini or peanut butter (45 mL)
1 clove garlic, minced
1 teaspoon cumin (5 mL)
1/8 teaspoon cayenne pepper (0.75 mL)
2 tablespoons + 1 tablespoon extra-virgin olive oil, divided (30 mL + 15 mL, divided)
1/3 cup aquafaba (It's the juice in the can of chickpeas) or water
Juice of 1/2 lemon
Salt to taste
Pinch smoked paprika

Directions

In a food processor, process chickpeas, tahini, garlic, cumin, cayenne pepper, 2 tablespoons (30 mL) olive oil, aquafaba, lemon juice, and salt until smooth.

Transfer to a serving bowl, drizzle with 1 tablespoon (15 mL) olive oil and sprinkle with smoked paprika.
