Banana Bread

Description

Baked goods do not have to be a guilty pleasure! When the right ingredients are selected, you can turn sweets into a delicious and nutritious snack option.  

 

Ingredients

2 ripe bananas 250 g
1 tablespoon of lemon juice 15 ml
1/2 cup vegetable oil 125 ml
1/2 cup soy milk 125 mL
1 cup of packed brown sugar 200 g
2 cups all purpose flour 300 g
1 teaspoon salt 5 g
1 teaspoon baking powder 5 g
1 teaspoon baking soda 5 g
3 tablespoons ground flaxseed 40 g
1/3 cup chopped walnuts 40 g
1 tablespoon vegetable oil for the bread pan

Directions

Preheat the oven to 350 ° F / 180 ° C.

Oil a 23 x 13 cm (9 x 5) bread pan.

In a bowl whisk together the bananas, lemon juice, vegetable oil, soy milk

and brown sugar until smooth. Set aside.

In a separate bowl, combine flour, salt, baking powder, baking soda, ground flaxseeds and chopped walnuts.

Add the dry ingredients to the wet and to stir as little as possible.

Spread the batter in the prepared pan.

Bake for about 45 minutes or until a toothpick inserted in the center comes

out clean.

Let cool completely on a wire rack before removing from the pan. Cut into slices.
