| 3 tbsp olive oil or vegetable oil |
| 1 onion, diced |
| 3 cloves of garlic, minced |
| 2 tbsp fresh ginger peeled and minced |
| 1 tsp mustard seeds |
| 1 tsp fenugreek seeds |

| 1/4 tsp cayenne pepper |
| 1 cup red lentils, rinsed 200 g |
| 2 potatoes, peeled and diced 300 g |
| 3 cups of cauliflower florets 300 g |

| 3 cups vegetable broth 750 ml |
| 1 tsp salt (may vary) |
