Description

There’s nothing easier to slip into a lunch box than a few of these mega-healthy energy balls. Super easy to prepare, every single ingredient in them is a nutritional powerhouse! 

These No Bake Chocolate Chia Coconut Energy Bites are perfect for a delicious snack,

 

Ingredients

2 cups dates, pitted (250 g)
11/2 cups grated coconut, unsweetened (130 g)
1/4 cup hemp seed (35 g)
1/4 cup chia seeds (40 g)
1/4 cup cocoa powder (18 g)
2 tablespoons maple syrup
A pinch of salt
1/2 cup grated coconut to coat the bites (50 g)

Directions

Soak dates in boiling water for 10 minutes.

Drain thoroughly and add to a food processor.

Add the remaining ingredients and blend for a few minutes or until mixture is smooth and holds together.

Roll the dough into 20 bites, coat in grated coconut and refrigerate.

Can be stored in the refrigerator for up to 7 days in an airtight container.
