Description

This homemade tomato sauce is great on pizza, tossed through pasta. There’s so much you can use it for!

Ingredients

1 minced onion
2 chopped carrots
2 celery stalks, chopped
4 cloves garlic, minced
2 tablespoons vegetable oil
1/4 cup (60ml) tomato paste
1/4 cup (60ml) olive oil
1 tablespoon dried oregano
1 tablespoon dried basil
1/2 teaspoon crushed red pepper
3 bay leaves
1/4 cup (60 ml) maple syrup
10 cups canned tomatoes (2 1/2 liters or 3 cans)
Salt and pepper to taste

Directions

Using your hands, crush tomatoes. Set aside.

Place a large saucepan on the heat and pour 2 tablespoons of vegetable oil, add the vegetables and cook until soft, about 10 to 15 minutes.

Add the remaining ingredients except tomatoes and fry over medium-high heat 2 to 3 minutes.

Add the tomatoes and bring to a boil, stirring often. Lower the heat and simmer for 1 hour. Season with salt and pepper and serve.
