One Pan Mexican Quinoa

Description

It’s delicious, It’s easy to make, it’s packed with proteins : Quinoa!
Remember to always rinse quinoa before cooking it to remove the saponin which gives it a bitter taste.

Ingredients

1 tbsp vegetable oil
1/4 cup chopped leeks
1 tbsp tomato paste
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon of maple syrup
1/4 cup fresh or frozen corn kernels
1/2 cup quinoa
1 cup vegetable broth
salt and pepper to taste

Directions

Rinse quinoa.

In a small saucepan saute leeks in oil for 2 minutes.

Add remaining ingredients, bring to a boil over high heat. As soon as it is boiling, lower the heat, cover and let simmer for 10 minutes.

Remove the pot from the heat and let it sit, undisturbed with the lid on, for at least 5 minutes.

Serve with black beans, avocados and minced green onions or cilantro.
