Description

Instead of the usual beef or chicken, chickpeas make a high protein vegetarian alternative in this easy flautas recipe that’s perfect for a busy weeknight. Serve with your choice of guacamole or salsa on the side!

Ingredients

1 can (19 oz./540 mL) chickpeas, rinsed and drained
1 red pepper, chopped
3 green onions, thinly sliced
2/3 cup chopped coriander (10 g)
1 teaspoon onion powder (5 mL)
1/2 teaspoon salt (2.5 mL)
4 tablespoons vegan mayonnaise (60 mL)
Juice of 1/2 lemon
6 small tortillas

Directions

Preheat oven to 350˚F (180˚C).

In a large bowl, coarsely mash chickpeas with a fork or potato masher.

Add remaining ingredients and mix well.

Spoon 2-3 tablespoons (30-45 mL) of chickpea mixture onto each tortilla and roll as tightly as possible. Place on a baking sheet, with seams facing downwards.

Bake for 10 to 15 minutes, or until crisp.
