Tofu & Prunes

Description

Ingredients

2 tablespoons vegetable oil
1 chopped onion
1 block tofu 450g diced
150g of pitted prunes
1/2 teaspoon cinnamon
1 tsp madras curry powder
1/4 tsp clove
1 tablespoon maple syrup
1/4 teaspoon crushed red pepper
400 ml of coconut milk
2 tablespoons tomato paste
salt and pepper to taste

Directions

Preheat oven to 350˚F (175C).

In a saucepan heat oil over medium-high heat. Add onion and tofu. Saute 5 minutes.

Add the prunes, cinnamon, curry, cloves, maple syrup and crushed red pepper. Continue cooking 3 minutes.

Stir in the coconut milk and tomato paste. Add salt and pepper to taste.

Transfer to a baking dish. Bake 30 minutes or until the tofu has absorbed half the sauce.

Serve over rice and garnish with pumpkin seeds.
