Warm Lentil and Sweet Potato Salad

Description

Warm the soul with this Lentil and Sweet Potato Salad with arugula and a delicious mustard dressing. A perfect midday lunch or soothing dinner recipe for any night of the week.

Ingredients

2 sweet potatoes 500 g
2 tbsp olive oil
salt to taste
2 tbsp olive oil
2 tbsp soy sauce
1 tbsp maple syrup
1 tbsp apple cider vinegar
1 tbsp whole grain mustard
1-400 ml can of lentils, rinsed and drained
3 cups arugula 40 g

Directions

Preheat oven to 375˚F (190 ° C).

Chop up sweet potatoes into bite-sized pieces. Drizzle lightly with olive oil and salt to taste.

Bake for 30-35 mins.

In a bowl, combine olive oil, soy sauce, maple syrup, apple cider vinegar and whole grain mustard.

Add lentils, arugula and roasted sweet potatoes.
