Vegan Blueberry Crumble

Description

Ingredients

1 1/4 cups all-purpose flour (175 g)
1/2 cup almond flour (50 g)
1 teaspoon baking powder (5 mL)
1/2 teaspoon salt (2.5 mL)
1/2 cup vegan butter (100 g)
1/2 cup sugar (100 g)
3 tablespoons maple syrup (45 mL)
5 cups frozen blueberries (600 g)
1/4 cup maple syrup (60 mL)

Directions

Preheat oven to 350°F (180°C).

In a medium bowl, combine flour, almond powder, baking powder, and salt. Set aside.

In another bowl, beat margarine, sugar and maple syrup for 2 minutes.

Mix in dry ingredients.

Beat for a few seconds until mixture has a grainy texture. If necessary, add more flour.

Place blueberries in 8-in. (20-cm) square baking dish.

Add maple syrup and mix well.

Spread crumble mixture over blueberries and bake for about 45 minutes, or until crumble is golden brown.
