General Tso’s Chickpeas

Description

General Tso’s Chick Peas (Vegan, Gluten-Free) is a delicious and healthy alternative to general tso chicken or even General Tso’s Tofu for those who are avoiding soy. Delicious served over steamed rice, General Tso’s Chickpeas are quick and easy to prepare. 

Ingredients

3 tbsp vegetable oil
1 red bell pepper, sliced
1 head of broccoli cut into florets 200 g
1-540 ml can of chickpeas, rinsed and drained
3 green onions, chopped
1 tbsp minced ginger
3 tbsp soy sauce (or tamari, gluten free)
3 tbsp maple syrup
3 tbsp Ketchup
1 tsp Sriracha sauce
1 cup vegetable broth 250 ml
1 tbsp cornstarch
2 tbsp water

Directions

In a large skillet, over high heat, sauté vegetables, chickpeas and ginger in oil for 10 minutes.

Add soy sauce, maple syrup, ketchup, sriracha sauce, vegetable broth, stir to combine and bring to a boil.

Mix cornstarch with water in a small bowl and pour cornstarch mixture into the preparation.

Bring to a boil stirring constantly.

Serve over basmati rice.
