Wild Mushroom Quinoa

Description

Ingredients

1 cup quinoa 180g
2 cups water 500ml
2 tablespoons olive oil
1 cup dried mushrooms (or fresh mushrooms,then use vegetable stock to cook the quinoa)
1 onion, chopped
1/2 cup green peas
1 tablespoon cider vinegar
2 tablespoons soy sauce
1 tablespoon maple syrup
1 teaspoon sambal oelek (red pepper paste)

Directions

Rinse quinoa. Rehydrate the dried mushrooms in water. Drain, save the soaking water, pour into a pot, add the quinoa, bring to boil, reduce heat and cook for 12 minutes.

Sauté onions and mushrooms in olive oil for 10 minutes. Add the cider vinegar, soy sauce, maple syrup and red pepper paste .Cook for another 10 minutes.

Add salt and pepper to taste. stir in the cooked quinoa and the green peas. Serve with avocado and almonds.
